POP3/SMTP question

A bit of a newbie question here for you folks that know better.

What is the best method, in your opinion, of setting up a complete mail
server solution?  Getting software to run is simple enough, but the relaying
issues are a bear if you don't know what you are doing, as is my case.

Obviously, there must be a solution out there that is secure, yet allows for
travelling folks to pick up their mail no matter where they are logged in
at.  Not so obvious, though is the method that is used to set that up.

Any thoughts would be appreciated.
