This question is related to pkg_add and pkg_delete, as you say.
That's where to start looking. At the end of the man page pkg_add
you'll find the section:
SEE ALSO
pkg_create(1), pkg_delete(1), pkg_info(1), mkdtemp(3), sysconf(3),
mtree(8)
In this case, pkg_info is what you're looking for.

That depends on how you install it. Read the documentation which came
with the package, or the Makefile. It's possible you'll have to do it
manually; that's one reason to prefer the Ports Collection.
