I second Roy's comment, the O'Reilly Postfix book is _excellent_.

P.S.  I submitted a port back in August to build Cyrus-SASL with 
Courier authdaemond support.  It uses only PLAIN and LOGIN, so you'll 
definitely want to use TLS/SSL.  
Postfix+Courier+TLS/SSL+MySQL+SASL2+amavisd-new+ClamAV+Razor2+Postgrey 
works wonderfully for me.  :)
