You also didn't mention the version of symon you are using.

I'm using the version from 3.6 ports.

bash-3.00# /usr/local/libexec/symon -v
symon version 2.65

I do get some data from symux:

But that pf data looks like it's not logging any numbers, according to the documentation on the data format, from the symon homepage.
