- coarse chop a good handful of onion (white, red, yellow -- all are good)
- pop about a cup of sticky rice and about 1 2/3 cup of water into a rice
cooker.
- when it "DING!"s, heat up a skillet quite hot, add a little olive oil, a
little butter
- Throw in the onion, stir it around, make a little brown, turn it down,
listen to the sound
- divide the nicely carmelized onion into each bowl, with a little bit of
Muenster or other mild cheese waiting
- fry one egg per serving on the still-hot skillet, sunny-side up or overeasy
- while the egg fries, add some thin-sliced green pepper, barely-steamed
spinach, or chopped cucumber to each bowl (you know -- a
veggie!)
- scoop rice into bowls on top or mixing with other ingredients, top with
egg
- add a teaspoon of chili-garlic sauce (tablespoon if you're brave)
- if they're handy, sprinkle some sesame seeds (or almond slivers, or
sunflower seeds)
- stir, mixing all ingredients thoroughly, enjoy. mmmmm!
This is clearly not vegan (cheese, egg, butter) but as formulated above uses no
meat in the usual sense. It's similar to my favorite
Korean dish bi bim bap, but the cheese and olive oil are of course dead
giveaways ;) Carrots or peas I think would be good in it as
well, as would bean sprouts, chopped avacado, slices of tomato, steamed squash
... I've made similar dishes out of various
leftovers. For meat-eaters, bacon or chopped Kielbasa would turn this into (what
I would consider) a well-rounded breakfast.
